Ingredients
- 1 Medium Pork Fillet
- 50g Crushed Peanuts
- 1/8 Bunch Fresh Mint
- 1/8 Bunch Corriander
- 1/3 Punnet Grape Tomatoes
- 1/2 Continental Cucumber
- Small Bag Mesculn
Note
This makes a healthy and filling lunch and the spice and chilli gives a great kick to get you through the afternoon.
Directions

| Rub the pork fillet with Chinese 5 Spice Powder | |
| Step 2 | |
| Lightly oil the toaster and place fillet on it and close lid | |
| Step 3 | |
| Once cooked through rest for 5-10 minutes | |
| Step 4 | |
| Slice cucumber, chilli, tomatoes, onion and capsicum and place in bowl | |
| Step 5 | |
| Tear Mint and Corriander and add to bowl | |
| Step 6 | |
| Add Mesculm, peanuts and dressing to bowl and toss | |
| Step 7 | |
| Slice pork and plate | |
