Ingredients

  • 1 Medium Pork Fillet
  • 50g Crushed Peanuts
  • 1/8 Bunch Fresh Mint
  • 1/8 Bunch Corriander
  • 1/3 Punnet Grape Tomatoes
  • 1/2 Continental Cucumber
  • Small Bag Mesculn

Note

This makes a healthy and filling lunch and the spice and chilli gives a great kick to get you through the afternoon.

Directions

Step 1
Rub the pork fillet with Chinese 5 Spice Powder
Step 2
Lightly oil the toaster and place fillet on it and close lid
Step 3
Once cooked through rest for 5-10 minutes
Step 4
Slice cucumber, chilli, tomatoes, onion and capsicum and place in bowl
Step 5
Tear Mint and Corriander and add to bowl
Step 6
Add Mesculm, peanuts and dressing to bowl and toss
Step 7
Slice pork and plate
